1 cup sugar 1 cup flour 1 cup oats 1 cup coconut 125g butter/margarine 3 tblsp golden syrupy 1/4 cup boiling water 1/2 tsp bicarbonate soda
Mix sugar, flour, oats and coconut together in a large bowl. Melt butter and golden syrup over low heat. Mix bicarbonate with boiling water and add to the melted mixture. Add liquid mixture to dry ingredients and mix well. Grease baking tray and break dough into small balls and slight press down. Bake at 160 for 10-15 minutes.. allow to cool completely

(Malay Style Chicken in Tomato Sauce)
* = optional
3 chicken legs, skinless and in small pieces
* For the marinade 1tblsp turmeric 1tsp salt
The base of the sauce 1 onion 3 cloves of garlic 5 dried chilli 2 slice of ginger * 1 lemongrass Water
For the sauce 4 whole cloves 1 star anise 3 green cardamom * 1 cinnamon stick 1tsp salt 200g Tomato purée 30ml coconut milk
* 1. Marinate the chicken with turmeric and salt for 30 minutes. * 2. Deep fry the chicken for 7 minutes or put them in an air-fryer at 200c for 10 minutes or until golden brown or seal the chicken on a frying pan with hot oil over medium heat. Remove from heat. 3. Blend all the ingredients from 'The base of the sauce' to make a paste. Leave aside. 4. Fry the cloves, star anise, green cardamons and the cinnamon stick in 1tblsp of hot oil over medium heat for 5 minutes. 5. Add 1 tblsp of oil and the paste and fry over medium heat for 7 minutes. 6. Add tomatoes, salt and chicken. Simmer for 25 minutes for raw chicken or 5-10 minutes for cooked chicken (from step 2). 7. Mix in coconut milk.

Farmers' union criticises move to import Polish beef

The Ulster Farmers' Union has criticised a Northern Ireland meat processor for selling imported Polish beef to shops here during the coronavirus crisis.
It said the decision by Ballymena-based Doherty and Gray was putting the livelihoods of local producers at risk.
But the company refuted claims that it had "disregarded local farmers".
Beef farmers have reported a reduction prices for their cattle of up to £75 a head as the lockdown hits consumption.
Doherty and Gray said it sourced lots of Northern Ireland produced beef and would continue to pay the best possible price for it.
It's the second time the issue has flared up in recent weeks.
'Competitive prices'
Earlier this month the UFU criticised Irish-owned processor ABP and supermarkets ASDA and Sainsburys after Polish beef was imported and sold in GB supermarkets.
On this occasion the UFU said it had been contacted by members who' had seen steaks of Polish beef selling at very competitive prices in butcher shops.
"Our farmers are doing their best to provide food at this difficult time and they deserve respect for this, not to be undermined by cheap imports," a statement said.
"We urge all local retailers and butchers to seriously consider their beef sourcing policies. Now more than ever there is a greater need to support your local beef farmers who are facing unprecedented challenges as a result of Covid-19."

The union has raised its concerns with the Doherty and Gray.
The company said as well as supplying shops it also had a commercial division which traded in beef and pork products from across the EU.
"All of these products are clearly identified and sold as product from the country of origin.
'High quality local produce'
"In 66 years of business Doherty and Gray has always prided themselves in supporting and promoting the high quality local produce supplied by Northern Ireland farmers."
The closure of restaurants, bars, hotels, work canteens and fast food outlets has seen the collapse of major markets for beef, dairy and other produce.
Northern Ireland's agri-food industry has called for government support similar to that offered by other sectors.
But the bill will be so big that it would require intervention by either the UK Treasury or the EU

I just named that.🤣 Seriously after making Chocolate Cakes for as long as I can remember, I finally perfected the recipe.
This is the moistest and tastiest cake you will ever eat, well my husband, kids and family can't seem to get enough of it!
Ingredients
6 eggs 400ml sugar 120ml cocoa 200ml lukewarm water 120ml oil 500ml of cake flour 4ml salt 20ml baking powder
Method
1. Beat eggs and sugar. 2. Mix the cocoa with water and oil and add to egg mixture. 3. Add the rest of sifted dry ingredients 4. Bake at 180 degrees Celsius for 30minutes 4. I made one large cake and cut in half. Or you can divide batter in 2.
As soon as cake is baked, make a syrup by boiling together:- 1 and 1/2 cups sugar 1 and 1/2 cups water 15ml coffee powder (I prefer Nescafe) 10ml vanilla essence
Pour over warm cake
Make a topping by whipping together:- 1 fresh cream/ orley whip 1 can of caramel
